Homemade Graham Crackers

Well, once I found a delicious marshmallow recipe, I had to find one for graham crackers of course. How else to make those perfect s'mores?!



Thank goodness for one of my favorite blogs, "Smitten Kitchen!" who had a delicious and easy recipe for the best graham crackers I've ever tasted. I only changed the recipe a tiny bit, since I love the taste of molasses, so I wanted to add a little of that flavor in my crackers.

So here is the recipe:

Homemade Graham Crackers
2 1/2 cups all-purpose flour
1 cup dark brown sugar
1 tsp baking soda
3/4 tsp sea salt
7 tbs very cold butter, cut into pats
1/4 cup honey
5 tbs whole milk
2 tbs pure vanilla
1/4 cup molasses
Cinnamon Sugar (for sprinkling over the graham crackers afterwards)

1. Place flour, brown sugar, baking soda and salt in your food processor. Pulse until mixed. Drop cold butter pats into processor and keep pulsing until it's combined. When mixed the consistency should be like wet-ish beach sand. 

2. In glass measuring cup, add milk, honey, vanilla, and molasses. Mix until combined. Trickle into the flour mixture in the food processor and pulse until everything mixes into a sticky dough. 

3. When the dough is mixed, remove from food processor and place on the counter. Lightly dust with flour and press dough into a flat cylinder. Wrap dough in parchment or wax paper and chill in the fridge.

4. When dough is really cold, roll out flat (about 1/4 inch thickness) and cut into rectangles or squares with a pastry cutter. 

5. Place squares or rectangles on parchment covered baking pan and sprinkle with cinnamon-sugar mixture. 

6. Bake in 350 degree oven for between 12-20 minutes. Less baking time will result in a chewier more cookie-like cracker. Longer time will result in a crisper cracker. Monitor and bake to your liking. Just don't let them burn!
